How do you like your eggs? On a bagel is the correct answer. You can’t get far in your search for the perfect breakfast without running into eggs or bagels. And together, they magnify each others deliciousness to new heights.

Minimalist take on the bacon, egg, and cheese bagel. This you’ll find everywhere you look, coffee shop chains, bodegas, diners, brunch spots. Yummy no matter what cheese you use! Most opt for the sharp bite of cheddar, the smooth melt of American cheese, or a schmear of cream cheese. However, pepperjack, provolone, havarti, and colby do an excellent job as well. Smoked gouda elevates this with its smoky umami flavor. If you’re feeling a bit Greek one morning, sprinkle on some feta and enjoy.

Sunny-side-up

With a little runny yolk, over easy eggs provide built-in sauce. This is an important part of why an egg sandwich has the proper composition and texture. However, a fried egg isn’t for the faint of heart. This option involves a little more mess than a fully cooked egg. Pair an over-easy egg with anything that benefits from sauce: for example, sausage, pastrami, bacon.

A childhood favorite. Light, bright, and just right. The perfect scramble requires a pinch of salt and pepper and a vigorous mix both before and during cooking.
